We do:
ARCH=i386 vserver %{guest} build ...
echo "i686" > /etc/vservers/${guest}/uts/machine
echo "linux_32bit" > /etc/vservers/${guest}/personality

> Linux ns4.asisna.com 2.6.22.19-vs2.3.0.34.1 #1 SMP Mon Mar 17
> 05:32:04 EDT 2008 i686 i686 i386 GNU/Linux
