However, this doesn't help if I want to assign real ip addresses to the
loopback address.

You could use dummy interfaces instead, one for each vserver machine you want to set up, I didn't do this way on my scenario because I didn't need it. You create them on the "host" and assign from the vserver interfaces configuration directory.
